Chocolate Chunk Bacon Cookie Recipe

Ingredients

  • 6 tablespoons softened butter

  • 4 tablespoons bacon grease

  • ¾ cup light brown sugar, packed

  • ½ cup raw sugar

  • 2 large eggs

  • 2 teaspoons vanilla extract

  • 2 ½ cups all‑purpose einkorn flour

  • 1 teaspoon baking soda

  • ½ teaspoon baking powder

  • 1 teaspoon sea salt

  • 2 cups chocolate chunks

  • 6–8 slices bacon, cooked crisp and chopped

Instructions

  1. Prep bacon and oven

    • Cook bacon until crisp, drain well on paper towels, and chop.

    • Preheat oven to 350°F and line baking sheets with parchment.

  2. Cream fats and sugars

    • In a large bowl, cream butter, bacon grease, brown sugar, and raw sugar

    • Beat in eggs, then vanilla, mixing until smooth and slightly thickened.

  3. Mix dry ingredients

    • In another bowl, whisk einkorn flour, baking soda, baking powder, and salt. Don’t overwork it.

  4. Combine and fold in mix‑ins

    • Add dry ingredients to wet and mix.

    • Fold in chocolate chips and chopped bacon.

  5. Chill dough (important for einkorn + bacon fat)

    • Cover and chill overnight; this helps einkorn hydrate and keeps cookies from spreading too much with the softer fats.

  6. Portion and bake

    • Scoop out cookie batter, spacing 2 inches apart.

    • Bake at 350°F for 9–11 minutes, until edges are just turning golden and centers still look slightly underdone.

  7. Cool

    • Let cookies cool.
